As some of you know we are trying to eat healthier. My husband is diabetic and I am trying to lose more weight. He eats oatmeal for breakfast almost every morning. I really don’t know how he can eat the same thing over and over.
He loves blueberry pancakes and so do I, so I decided to create a healthy version of them. Somewhere I read about using one banana and one egg to make pancakes, I was intrigued! We have removed white flour and sugar from most of our diet.
I started mixing things together and here is a great healthy recipe to start your day!
Lisa’s Blueberry Banana Pancakes
(Makes 4 small pancakes, 1 serving)
In mixer beat together:
1/2 tsp of Chia Seeds (Trader Joe’s)
1 TBS of Trader Joe’s Just Almond Meal®
1/4 tsp of cinnamon
Melt in pan:
2 tsp of Coconut Oil (Trader Joe’s)
Pour batter into heated pan and add fresh blueberries on top of each pancake, once one side is done flip. They are actually sweet enough that we do not use syrup, but you can drizzle some raw honey on top if you prefer a sweeter version.
If you try the recipe let me know how you liked it. We shop at Trader Joe’s but I am sure you can find most of these ingredients at your local health food supermarket. When making for two people, I only used one banana, and doubled the rest of the ingredients.
